All the inside photos are with the slides extended (and they do look lovely). If you expect to be moving around the coach much while in motion or at least not parked-and-extended, ask the seller to pull the slides in and then see if you would be able to do what you want (make a snack or lunch, use the bathroom, watch a video).
From the photo, it looks like there is practically no kitchen counter space that doesn't require making the sink and/or stove unusable. (I have that same issue in my Winnebago.) Since you mention you like to cook, consider whether that would be acceptable to you even for a weeklong trip.
I am personally leery of dining tables with traditional chairs (especially wheeled) rather than bolted-down seats. What keeps them from rolling around while you are driving?
The bed looks kind of small, maybe a full rather than a queen? Or it could be the angle. If it matters to you, ask the seller. (Says it's a queen way down in the description)
It's curious that they don't mention the generator wattage. I'd be surprised if something with this many extras had an underpowered generator but I would ask anyway.
