I use the jack all the time, to get my rig up on stands when blocks are not enough for leveling. So it's not a waste of weight!
I carry a spare. Could I change it myself? Eh, if I really had to. But as others have said, it's good just to have it there for EMS or a friendly stranger to put on.
I don't worry about the age of a spare. When I get new tires, I have them save the best old one to be the new spare. If I have to use it, I don't think it's going to blow out before I find a tire store.
I have been known to carry TWO spares, when serious boondocking. Didn't use either one.
