I suspect you're just not using enough throttle and expecting too much out of a heavy laden rig.
It's not uncommon at all when towing a trailer up a grade to have the accelerator floored. This is rarely ever necessary when driving a vehicle without a trailer so it feels foreign to those new at towing.
If your vehicle is loaded close to it's limits and you're going up a hill you may need to have the accelerator floored for long periods of time. The engine may be turning 4,000 or more RPMs. This is quite normal and won't hurt modern vehicle. It is very abnormal in regular "car" type driving.
Next time you tow, put the trans. in tow/haul mode and use ALL of the throttle. I think you'll like it better.
