I also have the exhaust close to the floorboards, but my pipes have exhaust wrap. I don't notice heat from the floorboard, but I definitely feel heat coming off the doghouse. I am thinking of putting in some flexible hose to get a ram air effect when the rig is moving and help move air around the engine/headers.
I would recommend you try some pipe wrap first and see what kind of results you get. The next thing I would recommend is a header blanket. That would be intended to take the high exhaust heat and seems more safe to me. Spray foam will stick to everything it touches, possibly hold moisture and cover up wires/hoses, etc. A header blanket could be tied into place with some galvanized wire and easily removed if you need access in the future.
