Check out the specs on THIS Phoenix Cruiser. With 38 gallons of fresh water, plenty of waste capacity, twin batteries & 42 pounds of propane, you can boon dock solo for quite a long time. My wife and I have the same model now 9 years old HERE, but built on the E350 instead of the Sprinter. We can go through our fresh water in 3 days generously, or double that going conservatively.
