You should be able to bypass the water heater without adding any fittings at all to the present rig. They are designed to be bypassed so that winterizing pink antifreeze will not get into them.
Any number of things might have gone wrong. Most likely, if you were connected to camp site water is their pressure might have been too high and either the safety, or the drain plug or one of the fittings might have leaked.
Dry up around your heater, and put fresh dry paper towels around each possible source of water and see if you can isolate by seeing what towel gets wet and where it is leaking. It might just need tightening, or even a new safety valve.
