Interesting you are considering a PC-2100.
I always thought model 2100 without a slide out, would be ideal for a single person, assuming the dinette is long enough to sleep on. Just setup the dinette as a day bed with a nice backrest cushion for couch-relaxing time, Pitch the actual couch and use the space for more cabinetry and an integrated pull-out table for when sitting on the day bed to eat and such.
