If you can ascertain the state of your house battery--how large it is and whether it's worn or not--that would be a good thing to do and, if needed, beef it up before heading out. A single Marine/RV battery in good shape should be adequate to get you through one night of boondocking without much drama. If it runs out, you'll lose heat from the furnace and be uncomfortable, but no lasting harm should be done--even with outside temperatures a little below freezing, the interior of the RV should stay warm enough to prevent frozen pipes for that short time.
Other than that, just have some water in the fresh water tank, some propane in the propane tank, and some petty cash in the petty cash fund. Boondocking for a night isn't much different from camping at a fancy campground, other than perhaps needing to be a bit more conservation-minded about water and power. If you spend the night at a Wal-Mart, you'll have a handy place to buy most anything you discover you really need.
