When I rebuilt my cab-over I replaced the useless aluminum trim with strips of Eternabond tape. It sealed the seams fine but it is unsightly. Someday I will tape down wide strips of vinyl to overlap the sides at least 6" to protect the surface. Then I'll cut strips of fiberglass cloth wide enough to cover the Eternabond tape +1" on each side and apply the resin. When dry the fiberglass mold will come off the vinyl easily and then trimmed to size and finished. The finished product could then be held in place with a S/S screws or even double-faced tape and less screws. Sounds like a good idea?
