I am not saying it couldn't happen, just it never has. He is more likely to win the lottery without buying a ticket.
While may not be able to provide an actual case, a simple google search can find plenty of lawyers looking for this kind of thing. Just searching "rv towing negligence lawsuit" came up with a guy in North Carolina who seems to specialize in towing lawsuits on the first page, as a example. If you're happy with the risks, go right ahead - that's your choice. I certainly won't try stop you.
To me, this is exactly the same as travel insurance or car insurance (although car insurance is mandated by law). Some are happy to go without the insurance, but if you are ever in a situation where you need it and don't have it... that's where you have a big problem. But, hey, odds are you won't need it.
Come across a lawyer that is looking to make a name for themselves, or worse, try to get their client off on something and put fault onto you, I wouldn't put it past them to pick over the situation with a fine toothed comb to find possible "negligence" - it's their job after all. Again, whether the judge buys it or not is beyond anyone's control.
