We have had a bunk model since 2006 and the kids really liked them as it gave them their own space. The problem you mention - size - is an issue. The Hurricane we have had some of the longest bunks we saw (80 inches) which has allowed us to continue to use them as the kids got older. My son is now 23 but still fits (he is 5' 10' and slender build). He is still with us as he is autistic and will probably be with us for many years. Our thought is that we would like to full time in an upscale rig (Pheaton or -AlegroBus) but they do not have bunks... We have a few years to figure it out...but hate to give up the bunk.
I guess what I am getting at is that bunks have served us well and it really helps that the kids have a place to put their junk...and no breaking down beds everyday.
