Hi,
We've had our motorhome since new (2004) and it doesn't have bunks, and I've only seen one bunk model class A that I would even consider buying. (Forgot the brand, but it was an upper-model DP (I think?) and there was a bathroom between the bunks and the bedroom.)
I would not want my kids sleeping a paper thin wall away from the mommy-daddy space. No privacy whatsoever. Our kids sleep up front and they always have. There's a good hallway, closet space and bathroom between us. At the end of the day, the kids have the front of the rig and mommy & daddy have the back. That way, if we decide to watch a movie with "adult content", we don't have to worry about young ears glued to the other side of the wall. With their TV on and AC fans, there is quite a bit of privacy between their area and ours. (OK...here's a perk I never thought about when we bought the rig (it is our first RV). But wifey often seems to get very...um, shall we say "frisky" when we're camping. Not sure why, and I definitely won't complain. Not having that isolation between us and the kids would cause many opportunities to go unfulfilled. There, I think I phrased that so it won't get bleeped! ;) LOL)
I know there are lots of people who like the bunk models, but we really like our set-up and wouldn't trade it for any other. Our rig does have 2 sofas and a dinette, which gives us plenty of space up front if we want to watch a movie as a family too. We opted for "living space" over dedicated sleeping space. Kids will sleep anywhere. They can even sleep on those jack-knife and pull-out sofas that would cause some of us to walk hunched over for a week. No problems for them. :)
I never understood the issue with pulling out and putting away the dinettes and sofa each day. Once you get into the swing of it, it's a 5 minute conversion at night and another 5 minutes in the morning. Tops! Now the kids are old enough to do it themselves.
Stow the linens and pillows the kids will need in the cabinets above their sleeping space and they'll be getting their spots ready & putting things away each morning before you know it.
Anyway, don't hesitate to get a non-bunk model class A.
Good Luck in your search.
