My Dutchstar throttle is a little further to the right than I would prefer also. I haven't found it to cause me any issues, except that it is noticeable when I first drive it after a few weeks off.
If the seat is centered behind the steering wheel I wouldn't relocate it, but would see if you can't do something about the pedal placement.
Obviously the seats in our MH's are designed for multiple uses, both driving and seating while parked. This approach doesn't really provide a great seat for either use, in my opinion. Replacing the current seat with one designed for long haul truckers would be a good solution, but you may have a difficult time matching it to the remaining passenger seat. Or that may not matter to you.
