Congrats!!! Just think, soon you'll have a paid-for house. How many people can say that?
I have a different take on the solar question. I say wait and see if you really need it. With the generator and really good house batteries, I've never needed anything else. However .... I rarely park in one spot for long. If you can recharge your battery using the generator or while driving or hooked up to a friend's shore power, you should get along fine.
I can generally go one week between dumping trips. But my toilet use is, um, very light. And you've got your onboard water so you won't need city water hook-ups unless you just prefer that.
Try it for a while. Get used to all the systems first (the learning curve is steep; at least it was for me). By then, you'll figure out what your travel style is. You can always get solar later.
