Most scales that you drive up on, even if there is room to the side, do not allow you to be level so the weight is of little use. If the coach leans towards the scales, the weight reading will be too high. If the coach leans away from the scales, which happens the most, the weight reading is too low.
It's not the tipping of the motorhome that's the issue. It's the weight jacking effect of uneven scales. It's the same physics as why four legged stools often rock on three legs (there being the 0 weight on the fourth leg). With springs rates around 1000 pounds per inch (give or take) it doesn't take much height difference to add or remove hundreds of pounds from a tire, skewing the scales readings.
