Hmmmm....interesting discussion. I'm 230ish and have been on our roof numerous times and several times with another adult in the 200ish range. Yes, there is some occasional creaking when walking in some parts and I do feel the flexing, but it is a thin plywood roof structure after all. I hate ladders and heights, so walking on the roof of a vehicle which rocks on its suspension is a bit unnerving, but I do it. I'm just super careful. I'm up there several times a year for cleanings, inspections/resealing and repairs.
As far as the ladder, in my case, that seems to be the sturdiest part of the experience. It is just screwed into the fiberglass on the back of the motorhome, but it seems to be sturdy. Should it ever loosen, I think using backing 2x lumber to reattach it is a good idea. I think it's more stable than a separate, unattached ladder.
I'm guessing in most cases, if you have an air conditioner on your roof, there were at least 2 people on the roof to position and install it, so the roof should be able to support them plus the weight of the AC.
