The 3.7 is rated at 302 HP at 6,500 rpm. Folks fuss about the V-10 reving to 4,250 to reach max HP (305). I can't imagine what that V-6 sounds like at 6,500.

It might sound somewhat similar, if a normally aspirated V10 and a turbo V6 ever sound at all similar. The number of cylinders firing per second (and hence the primary tone of the engine noise) is actually a little bit higher with the V10 at 4250 RPM.
I would guess that the 3.5L engine isn't designed for prolonged operation at high output, or the cooling system (and space for it) isn't sufficient to dissipate continuous long-term output on the chassis cab. Regardless, 380 HP should be plenty sufficient, I would think; that's about 100 HP more than I have on my '98 with the V10, and I think it is perfectly acceptable (though I would not complain about having more power).
