I am a veteran of 10-day trips to areas where resupply is difficult. I am also solo and not a fussy eater. My plans: I don't count on much refrigerator use because my frig is tiny. Prep fresh foods at home, eat them first, then later on the trip perhaps cook up a big batch of something made from canned food and rice or pasta and low-volume frozen meat from your freezer and put that into the frig for leftovers. Bread is almost always a problem on longer trips, so I use tortillas or flatbread or crackers. Don't plan on bananas being around after the first few days. For breakfast, my current favorite is homemade Overnight Oats (quick oats, powdered milk, chopped dry fruit); I prep pouches at home and each evening add water to one and put it into the frig to soak overnight and be ready in the morning. Eggs, canned tuna, cheese, peanut butter for protein. Carrots, celery, and other raw veggies can keep for quite a while in the frig. The point for me is the trip, not the food.
