My new favorite way of preparing spuds when grilling.
1. Pierce and microwave until slightly soft (one potato per guest).
2. Using a very sharp knife, slice the potatos lengthwise into wedges. I usually slice them into 8 wedges per potato, but you can make them thicker or thinner if desired.
3. Spray the wedges with cooking spray or lightly coat with corn or canola oil.
4. Place the wedges on the grill and turn as needed for about 4-5 minutes until browned. They are already cooked, so lengthy grilling time is not needed.
5. When done, very lightly coat the wedges with cooking spray or oil and sprinkle with Salt, Pepper and any other seasonings of your choice.
Very easy, quick and tasty.
