My cheesy potato pie! Or, as referred to by some, "naughty potato pie", since it has whatchamightcall way more grease than is good for you in it:
In a well-bacon-greased ten inch iron skillet, cook as many chopped potatoes as you can cram in until nice and brown. When just about cooked through, add a whole chopped onion and cook just until the onion is translucent. (Additional bacon grease optional).
Meanwhile, take an egg, a cup of mayo, a cup of grated parmesan cheese and mix well with enough milk to make it sorta runny. Dump that on top of the cooked potatoes and put the whole shootin' match in a 350 degree oven until custard sets and is nicely brown on top- about fifteen minutes....done!
Those with a real death wish might add additional cheese on top near the end of the baking process- cheddar works nicely! :B
