I cook mine on low for about 8 hours. Don't fill the crock more then 3/4 full. Works great with sweet potatoes also... mix or match doesn't matter. I usually rub a bit of olive oil and salt on the white potatoes before wrapping them. Don't forget to prick em several times with a fork before wrapping to allow the steam escape.
