Country Fries
Boil or steam potatoes with skin on until just done. Drain water. Using a hand towel hold them while you skin them. The skins fall right off. Cover with a damp towel and let cool. Put in refer if you want and they will keep for a few days.
Now, when ready to use them just slice into 1/4 inch thick slabs and toss onto a hot oiled skillet. Use Salt, pepper, garlic, paprika, white pepper, and fry to a golden brown.
Don't try to cut them while hot or they will fall apart.
These are fantastic on a hot grill over an open fire or a dutch oven skillet that is 22 inches wide.
