Creamy Garlic Mashed
In a large skillet (use a skillet rather than saucepan to have more "open air" so mixture will cook down over time) melt 1 stick of butter. Add 6 - 8 large cloves of garlic, peeled and smashed with the flat side of a kitchen knife. Stir garlic and butter for a minute or two. Add a pint of heavy whipping cream. Heat just to boil, then reduce to the very lowest setting on your stove. This mixture should sit on the stove several hours--all day. When ready to prepare dinner, peel 5 or 6 medium-bake type potatoes, cut in 3 or 4 pieces each, cover with water, bring to a boil, then lower temperature to cook til done. Drain potatoes well. Begin to mash potatoes with masher or with a mixer then add the entire cream/garlic/butter mixture and continue to mix/mash til smooth. Add salt and white pepper to taste. Easy, delicious.
