A little help with some side dishes please.
Currently on a camping trip with three other couples. We need some suggestions for side dishes. Quick and easy would be a plus. Thanks.

Partial peel some fresh cucumbers (2-3 depending on size...small better)
Slice a white onion...separate the rings
1/2 c. white vinegar
1/2 c. water
1/3 c. sugar
dash of salt and pepper
In shallow dish lay out cucumber/onion slices
Mix vinegar,water,sugar and S/P
Pour mix over cucumbers/onions
Cover/marinate at least 1 hour...overnight better
Crisp, clean, refreshing salad
