Any aebleskiver experts?

I like to walk over to the thrift store behind my office from time to time and today I found a cast iron aebleskiver pan for $5. I snatched it up not knowing what an aebleskiver was since I saw some other uses for the pan. But are there any aebelskiver experts here?

  • I figured it was only a matter of time before Solvang would come up. I've had breakfast at the restaurant mentioned. It was excellent. Also a place in town called Paula's Pancake House. Every time we pass through Solvang, we hit up those two places.
  • YouTube for Ebilskiever and watch a few videos. Our favorite is filled with nutella!
  • Dave..............My wife makes them quite frequently.......had them just 2 Sunday's ago......She uses just regular Krusteaz pancake mix......there is little to no difference between pancake mix and a Ableskiever recipe.......


    Over the stove top........You need to fill each cavity with about a tablespoon of oil........when hot, pour in some batter.......when it forms a skin on the bottom and before it cooks through you use a wooden skewer and rotate the ball of dough a bit.........usually 3 rotations are needed to make it completely round.....then with the skewer you pull it out and plate it.......We serve ours with powdered sugar and raspberry jam that has been thinned a bit with water........



    Hey, if you ever get down south just north of Santa Barbara......check out the town of Solvang......they make the best Ableskivers ........

  • My pan is the full cast iron version so I anticipated these pancake balls being cooked in the oven. Now I'm not too sure about the cooking process on the stove top.
  • Very good and fun.... we've used an injector to squirt jam inside the cooked balls. Sprinkle with powdered sugar, cinnamon or cover with icing.
  • Aebleskivers are similar in texture to American pancakes crossed with a popover, æbleskiver are solid like a pancake but light and fluffy like a popover.

    Other uses for that pan
    Cornbread muffins
    Corn Fritters
    Crab stuff mushrooms
    Oysters Rockefeller
    Soft cooked eggs....heat pan remove from heat and crack an egg in each slot
  • Dave, I've been interested in those pans, too-but I don't have enough room for any more 'one-trick' ponies. What other uses do you imagine for the pan? Can you put the whole pan in the oven, or does it have a wooden handle? I'm thinking maybe baked meatballs? TIA
