I just made up a couple of batches to freeze for our get-away.
Homemade Enchiladas. Just use your favorite recipe. Cook, then freeze.
Homemade Manicotti. For the Manicotti, I cook the manicotti according to directions, create the stuffing mixture (recipe on the box), stuff the cooked manicotti and freeze four to a package (serves 2). Just defrost, cover with marinara sauce, and microwave for 3-4 minutes. Serve with a salad.
