Baked stuffed shrimp
Having just finished our Valentines day dinner with more than a little success I feel compelled to share this reasonably simple recipe.
Baked stuffed shrimp:
Get the largest (I used jumbo 16 ct - a half pound gave us 9 very nice shrimp), you can find, peel, de vein and butterfly cut them to open them up, rinse and pat dry.
Make your stuffing from 2 parts crumbled Blue Cheese, one part Creme cheese, a quarter tsp of horseradish, quarter Tsp of Smoked paprika and a quarter Tsp of cayenne. A splash of Worcestershire sauce and add seafood or chicken stock to get the desired consistency (think very thick Blue Cheese dressing). Reserve some of the stuffing mix for dipping.
Lay each shrimp on a slice of Prosciutto and place the stuffing mixture into the butterflied shrimp, top with toasted seasoned bread crumbs. Roll the shrimp into the prosciutto and top with more seasoned bread crumbs.
Bake at 350 for 20 - 25 minutes, let stand for 2 or 3 minutes and serve with the reserved stuffing mixture as a dipping sauce.
Accompany this with anything you like. Black beans and Crescent dinner rolls with a nice Pinot Grigio worked well for us. enjoy!

Edit: Forgot to mention garlic. A little minced would be good, didn't have any so used a one quarter tsp of garlic powder. :W
