For the best ribs EVER I bake them. Regular slab, 275* 5-6 hours covered, remove cover to let brown. Baby Backs, 275* 3-4 hours covered, remove cover to let brown. The meat falls off the bone! You can also fast brown on a grill for that flavor then bake. Low and slow. If you want tough cut back on the time!
