Best Southern Fried Chicken Batter

2 beaten egg
1 cup milk
2 teaspoon paprika
1/2 teaspoon poultry seasoning
4 teaspoons garlic salt
2 teaspoon black pepper
2 cup all-purpose flour

Directions
Beat the egg and milk together in a bowl.
Combine the flour with the garlic salt, pepper, poultry seasoning and paprika in a big plastic bag.
Put the chicken in the bag, seal it and shake to coat it.
Dip the flour-coated chicken in the egg mixture and again in the flour mixture.
Heat the oil in a skillet to 365 degrees F. Brown the chicken on all sides in the hot oil.
Turn the heat down to medium low and give the chicken another half an hour or until it is cooked through.
Drain it on paper towels and serve.

  • I love seeing real recipes like these. Recipes like these are going way with our freeze dried packaged world. I've made real fried chicken a couple times and when properly made, it's amazing and nothing like the Mr. Sanders makes for us. Having said all that, I've read and have found that if, after you're all battered up and ready to fry, let it sit for a 1/2 hr under refrigeraton(I take it out after 15min and then 15 min at room temp) and the batter gets tacky and fries up ultra crisp. Fried chicken is truly a delicacy who's reputation has been marred by current day sloppy practices.
  • this sounds like a good batter recipe, but I like mine better: 1 regular can of beer and 1 1/2 Cups flour...let it sit for at least one hour. Add some seasoning, salt, garlic powder, etc, if you want.
    you can dip anything into this batter and it's GOOD. :)
