Around here cabbage is the cheapest green around.
I've seen that cabbage is also used in the modern era. All the old Irish cookbooks call for kale originally. Once the center rib is removed it becomes very tender and tasty. Probably Bok Choy and Chinese cabbage are also an option in place of the kale. Any brassica will do if you remove the tough bits, I'm guessing.
