You're probably right. I'm trying to do the gluten-free thing, and use zucchini threads instead of pasta noodles. This might be a great topping for that.
I use a mandolin to slice matchstick sized zucchini threads about 6" long. I then put them in a colander, and pour boiling water over, that goes into a bowl below, then cover. They are perfectly cooked (steamed) in a few minutes.
