Breakfast Ideas For RV?

Toaster waffles and microwave bacon or sausage.
Cheese toast. Make toast, put cheese on top and melt cheese in microwave.
Grilled cheese, bacon and tomato sandwiches.
Biscuits in oven with ham and cheese. I buy the large ham slice, cut it into small servings that will fit in one biscuit and freeze them. I can take out 2 pieces and cook them quickly.

Nice pan of cornbread, or cornmeal muffins, or blueberry muffins, or blueberry pancakes, or cornmeal pancakes...

Definitely sourdough waffles or pancakes from scratch! The other thing that is easy to grab on the run is a crockpot of steel cut oats. Just put them on the night before and wake up to hot breakfast. I usually add a couple of cinnamon sticks, a chopped apple and a bit of brown sugar to the pot.

All of these are great ideas, particularly the sourdough anything. We often eat breakfast foods for supper. We'll hit the local fruit and veg stands to get fresh ingredients for omelets; a bowl of fruit with fresh cream; biscuits and sausage gravy; cheesy toast and tea, etc. if we're sightseeing that day we'll ask which local eatery has the best biscuits. We've found if a restaurant has great biscuits, the rest of it will be good too.

Get out a zip-lock baggie (a brand name/freezer bag is better here..).

Pour in some egg. Doesn't matter if it is real egg, or beaters. Add whatever you like in an omelette. Onions, green peppers, ham, bacon, cheese, jalapenos, etc.. (no potatoes- although haven't tried that). Put it in a pot of boiling water, and cook until the egg is done. Open bag and put on a plate, and you have a campfire omelette. It may be watery from the veggies, but you can pour that off of the plate.

We use this in the Boundary Waters canoe area on our yearly trip, and they are awesome.

If you are cooking for more than one person, label the baggie with a sharpie. We usually make up names for each other for fun.

Pillsbury biscuits from the freezer section of the grocery store are quite good. I can take out and make exactly what I need.

I just baked a pan of French toast bread pudding using cubed cinnamon bread, eggs, evaporated milk, sugar and vanilla. You can also add some chopped apples. Best served warm, add a bit of butter, syrup or a little milk. Great right out of the oven, keeps in the frig for days or you can freeze it in single serving slices.

One of mine and hubby's quick favorites house or camper:

First in disposible bowl- Stir together 1 egg, 1tbsp milk and season to taste-microwave 1 minute lightly covered, then stir lightly

Next add 1 packet instant grits and 1/2 cup water with about 1/8 to 1/4 cup cooked meat ( I like breakfast sausages). Stir to combine. Microwave lightly covered for 1 minute then stir

Finally add 1 tsp to tbsp of butter and about 1/8 cup of any cheese you like. lightly cover and microwave about 30 seconds. All total 2 1/2 minutes.

Tip: I sometimes rotate each step with mine and hubby's so they are ready about the same time. Enjoy!

These work real well in a good toaster oven. We used them quite often when traveling. whip up a pan of gravy from a package and poach a couple of eggs and you're ready to go.

The simplest thing I do is a waffle. Get an electric waffle iron with indicator lights (ready to cook, cooking complete). Aunt J pancake mix (1/3 cup) with some water, a couple of minutes and you have a done waffle. I add nut pieces to the mix and heat a little syrup and butter in the microwave. Do your preferred breakfast meat on the side. Bacon takes about as long to cook as the waffle making process does.
