I have one and have used it for turkey with great results, I've never tried frying in it. Do you use the extra racks that are available?
Yep, that's the one. We have two small racks that click inside the big one, just enough space for a big chicken in pieces.
We've never succeeded at frying chicken in the cast iron skillet of oil. This version came out crispy, spicy, with tender meat. Re-heating in the microwave did not dry out the pieces, and it was tasty cold, too.
We'll definitely do this whenever we feel a need for "fried" chicken, since the nearest Popeye's is many miles away.
