Yep, that's the one. We have two small racks that click inside the big one, just enough space for a big chicken in pieces.
We've never succeeded at frying chicken in the cast iron skillet of oil. This version came out crispy, spicy, with tender meat. Re-heating in the microwave did not dry out the pieces, and it was tasty cold, too.
We'll definitely do this whenever we feel a need for "fried" chicken, since the nearest Popeye's is many miles away.
