I couldn't make it like them either but several things I learned from them over the years helped. Water needs to be warm, baking soda must be new(found this out the hard way), you can't kneed it to much or it gets tough, you have to add flour to it while kneading to keep it from sticking to your hands,and you have to let it rest for 20 mins or so before you make the pizza. Once you add the sauce, cheese and toppings it covers a lot of mistakes.
