it takes awhile to get a really good patina on your griddle or skillet. use PAM as a starter to cooking and use it to finish off your griddle after you have used it. I never wash my cast iron with soapy water. I just rinse them with very hot water as soon as I'm through cooking, while the iron is still hot, then wipe dry and spray a little PAM on them and wipe off the excess.
With a griddle, you'll probably never do anything but fry or do pancakes on it. With a skillet, if you cook something like scramble eggs or chili, something wet, you might need to re season after you're done.
Stay with it. You'll be glad you did.
P.S. you might be getting your griddle too hot. try turning down the heat a little.
