When it's just the two of us during any celebration I like to mix things up with extravagance AND simplicity to the cook.
Figs stuffed with goat cheese or prunes stuffed with foie gras; unpitted (if possible) black olives (the kind from the deli counter) roasted with rosemary, red pepper flakes and orange peel; shrimp skewers or just a shrimp ring from the market w/ cocktail sauce. I like to make my own pates having made one every December for the last 6 years since it serves nicely whenever company drops by but you can just as well buy one from stores like Trader Joe's or Whole Foods.
In the veggie department, how about a relish tray or maybe a salad plate filled w/ crudities and your favorite dip or maybe stuffed cherry tomatoes if you can get nice ones this time of year. Tomatoes not available? Try using those adorable mini peppers available at many markets. Just slice them across and forget trying to make them stand up straight, LOL.
I've found that 4-5 appetizers per person per hour does well when calculating how to keep people from "starving" until the main event.
You've a plethora of great choices throughout this thread and I'm sure more to come so let the world be your oyster which of course is another choice on the half shell :D.
