Flour and brown in bacon drippings or lard. There will be excess flour and kee it stirred around the skillet. Most of the coating may come off the meat. The meat has to be somewhat dry and the coating allowed to sit for a while. Cook on medium heat Yu really don't want urned coating. when the meat is judged cooked through, sprinkle flour and cornstarch from a shaker with large holes and keep stirring, Introduced osme cream, of milk fro the stingy, and continue to stir. You might want to add more flour slowly and more cream r milk and salt and pepper. A little water if too tight and stir until consistency is right and the flour is cooked and is browned. Of course you put some green onions in along the way, a lot of green onions and it is no doubt salted to perfection with the bite of fresh ground pepper.
Wif'es mother made it the same way but instead of cream it was tomatoes and tomato paste and flower and or corn starch, with onions and green peppers and black pepper. It was callled sweedish steak. An you caan't get enough of it. It has to be seasoned just right. All of this is cooked in big iron skillets.
I'm getting hungry. Don't forget the cornbread and homemade wheat bread. No store bought stuff to give indegestion.
