Here is another idea for using a crockpot in an RV. We have a Class B Great West Van. The inverter (DC to AC) for the TV is above the kitchen galley so we use it while traveling down the road with the crockpot plugged into it. The engine alternator is basically keeping the batteries charged so we can slow cook all day long while driving, have a meal ready as soon as we stop and still have fully charged batteries.
As an extra precaution we place the crockpot in the sink and brace it so it does not slide around. The best crockpots for an RV are the kind that have removeable liners for easy cleaning.
