Dave's Smoked Meatloaf

First attempt at this tasty item.



Ingreidients:
2 lbs ground beef
1 small onion
1 egg
1/2 cup cracker crumbs
1/2 cup bread crumbs
1 clove minced garlic
1 stalk chopped celery
1 Tbs chopped cilantro
3 Tbs bbq sauce + 3 Tbs bbq sauce
1 Tbs Worcestershire sauce
1/2 Tbs taco seasoning
4 oz. shredded cheese
salt & pepper to taste
2 strips of bacon

Mix all the ingredients and top with strips of bacon and reserved bbq sauce. Allow to set in the frig for approx. an hour before putting in the smoker to allow the mixture to set. Smoke at 250 degrees until an internal temperature of 145 to 150.

I doubled the recipe shown in this photo.
  • Smoked meatloaf! Never had it but sounds and looks very appealing.
  • We always smoke our meatloaf and just about any other protein we eat. The food tastes so good!
  • I've smoked meatloaf before, with good results, but the bacon is a twist I've not tried. I'll remedy that soon. Thanks for the idea!

    You know, we are just over the hill in Reno and would love to get together for a feast...we'll buy the ingrediant's. :B
  • We call that recipe Mexican Meatloaf (and use a little pork or even ground chorizo instead of all ground beef).

    Like everything you post pictures of - It looks FABULOUS! So how was it?
