Yes, but how long depends on the usage. I don't keep it long after fish, if at all. Chicken is a 2 time meat for me unless it's skinless white meat.
I use a canning funnel and coffee filters to clear the oil of debris and I store it in glass jars. It's the breading, etc that spoils it because if it isn't removed the it burns on the second go around. If you fry something like skinned chicken or pork you add some meat fat to the mix and it doesn't last as long.
