Bologna was a staple. Many times for breakfast, Dinner and Supper.
With kraut was one way.
I've probably eaten enough bologna with good tomatoes and cheese sandwiches, in school lunches and so on, to feed an army.
In Southern Indiana farm country many Mom and Pop Diners have it in place of ham on the menu. Ask for ham and eggs and bologna is what I got.
Ate so much of it we never bought much of it after we got married, after seeing how it is currently made. When I was young it was bought in big rolls or logs. Hung in the smokehouse with other meats, at Grand Ma's. It looked withered and it was smoked and tasted different. I never was a big fan but occassionally a blonie samich with good maters and crisp lettuce and mustard hits the spot, maybe a big slice of yellow onion. One that was rather good was bologna, cheese, onion, pear or peach preserves.
