Does anyone have any good bologna (baloney) recipes?

I worked in a grocery as a kid and the Boloney we sliced up there made the stuff in the packages taste like garbage. We also had ring boloney and my favorite, pickled. I'll have to see if I can't find a good deli and try some of these recipes.
