Does anyone have any good bologna (baloney) recipes?

My mom used to use lebanon bologna to make gravy -- sort of the same as chipped beef gravy, but substitute the leb Bologna instead of the chipped beef. Made home fries as a side.

We also fried the bologna to make sandwiches, as others have suggested.
