- raindoveExplorerMy mom used to use lebanon bologna to make gravy -- sort of the same as chipped beef gravy, but substitute the leb Bologna instead of the chipped beef. Made home fries as a side.
We also fried the bologna to make sandwiches, as others have suggested. - ford_coupeExplorerIf any of you come thru Michigan try koegels baloney-best I've ever had. My favorte is white toast w/p.butter & baloney.

That recipe would fit this thread too. - doxiemom11Explorer IIOr did you mean that you want a recipe to make your own bologna?
- hokeypokeyExplorerI haven't read all the pages so this might have been posted earlier: FUNERAL MEAT is what we often call it. Grind up a hunk of bologna, add pickle relish, mayo, sometimes hard boiled eggs. Great on a fresh bakery bun ! Our church always serves this at the Fall Soup Supper and every year we make extra and set aside for a guy who comes to buy it. He gives us more than what we charge and we're both happy !!

I like bologna as well, but one has to remember that the companies that make it grind up parts that don't have much eye appeal the way they come off the hog or cow. :)
Yup, we are one of the few counties, Canada included, that doesn't make use of the whole animal routinely.
Bologna is sausage and only the meat, grind and the spices makes it balogna.
It's also good on a grill with some BBQ sauce and a good dose of smoke doesn't really hurt it either. - Jim_ShoeExplorerI like bologna as well, but one has to remember that the companies that make it grind up parts that don't have much eye appeal the way they come off the hog or cow. :)
- antiquedroseExplorerYep, fried up bumpy baloney on white bread, and then there was butter (margarine?) and sugar sandwiches, flashback to some childhood lunches/treats. We were skinny as rails, running off all those calories.
My kids were not offered this stuff, although they were fed crappy mac & cheese...
I still chuckle over my son, when 12, greeting me when I came home after a weekend away, declaring, "Dad and I ate white bread!" - notevenExplorer IIIBaloney lightly frazzled over a campfire, serve on toast with a drizzle of maple syrup.
