I also just learned that when making my Greek (or regular) yogurt, the leftover is whey, which is used to make authentic ricotta cheese. I've made ricotta cheese with store bought milk several years ago, but an Italian pointed out to me it wasn't "real".
I don't think I'll ever get enough whey to make real ricotta.
Wonder if the whey can be frozen?
ON EDIT: Yes, whey can be frozen up to 6 months.
