I've had good luck with this crock-pot recipe
1 cup butter or margarine
2 cups chopped onion
2 cups chopped celery
1/4 cup parsley flakes
2 8 ounce cans mushrooms, drained
12-13 dry bread cubes
cooked giblets (optional)
3-4 cups of broth from giblets or chicken broth if no giblets
2 eggs well beaten
1 tsp poultry seasoning
1 1/2 tsp salt
1 1/2 tsp sage
1 tsp thyme
1/2 tsp pepper
1/2 tsp marjoram
Melt butter in skillet and sauté onions celery parsley and mushrooms.
Pour over bread cubes in a very large mixing bowl.  Add all the seasonings and toss together.  Pour in broth to moisten, add eggs and mix well.  Pack lightly into crock pot.  Cover and set on high for 45 minutes, the reduce to low.  Cook for 4-8 hours. Stir occasionally.
If you use seasoned bread cubes, omit the salt and herbs.
