    Gary, which size d.o. were you giving those coal ratios for?

    Another way to mitigate the effect of weather on your d.o., especially in winter, is to set up a wind screen around it. Or you can do what I do: set it inside a kettle grill; put on the lid; and open the top and bottom vents.

Chicken, ribs, roast, corn bread, pizza, apple pie, brownies, cinnamon rolls etc. Start with 10-12 coals on the bottom and 12-14 on the top. Fewer on the bottom for bread type products a few more on top for a chicken. Trial and error somewhat but you figure 30-40 degrees each and you need that top and bottom. After an hour you will need fresh coals or at least add fresh coals as a chicken could take up to 2.5 hours. Lots of fun.
