I think I may try the shrimp paella on our next camping trip.
A few years back I made a version of this recipe using fideos or broken vermicelli instead of rice. I added saffron since I had it on hand and opted for smoked paprika since once discovered it's nevah left my spice cabinet or more truthfully, my fridge.
As I frequently camp near the seashore I added 1 cut up lobster (steamed at the market for free and cut into portions by self; love when stores make my life easier), more mussels and small clams; think I balked at the cost of scallops at the time so dinna use. Added a small bag of frozen green peas towards the end as well as some roasted bell pepper slices.
Didn't use a DO since I still don't have one (sigh) but a CI wok did a nice job cooking over the fire pit. You can make a stable base/ring of foil if you don't have one.
