Easy Pumpkin Soup
Threw this together last night. It was delicious.
2 T. garam marsala
1 ½ T. ground ginger
1 tsp. or more roasted garlic granules
2 tsp. salt
4-6 T. butter or ghee
1 small-medium onion, diced
2 cups water
2 cans pumpkin
1 can coconut milk
sour cream
Mix garam marsala, ginger, garlic and salt in a small bowl.
Melt butter over medium high heat. Saute onions until just beginning to brown on the edges. Add spices and cook 30 seconds. Add water, then whisk pumpkin into pot until smooth. Add coconut milk and heat through. Serve immediately with sour cream garnish.
NOTE: We served with naan, but oyster crackers would go well.
