Years ago they were packaged by size. When you opened up a carton of large eggs all were large and open up a jumbo carton of eggs and all were jumbo and the yolks inside proved it.
They the fda allowed them to go to a weight system. 'Total weight' of eggs per carton.
IMHO there is no longer any difference between regular size, large or extra large anymore the innards all look the same, other than the price.
I can remember going to the farmer down the road and getting a dozen of the Jumbo size eggs and you couldn't close the cover on the carton. They had to put a tape over it to keep the eggs from falling out.
BTW: This does 'not' mean 100% organic. It is the biggest hoax of all time from the USDA. :W
